Regarding skinning in Q2Modeller, goto the 3D Editor, select the faces you want to appear in the Skin Editor, and then goto the Skin Eidtor, and then Edit->Get Position From Model..., and choose Front, and then Back, and just select and mvoe the faces around in the Skin Editor to suit your needs. The orientation of the faces that appear in the Skin Editor is derived from the orientatin of them in the bottom left Viewport in the 3D Editor, which is the Front View.

Also, a slightly more detailed decription of what to do is in the help file.
