with any part of your biped selected, open up the motion tab (between heirarchy and utilities tab i think) and open up free-form mode. its just a simple icon of a standard stick figure. in this you can position the limbs, and if the proportions are off, you can extend them with the NU-scale transformer (as opposed to just scale, this does only along one axis at a time if you please).
most of the character studio options are in the motion tab (biped selected). others are when you are ready to apply physique to your character mesh.

when you select the center of the mass, are you selecting his pelvis, or the diamond (root) inside of it? this objects name is by default "Biped01".
